Well, it is! And we've got a delicious recipe to help you celebrate!
Baking Coach Peanut Butter Cookies
Baking Time: 12 minutes
Yield: 22 cookies
Ingredients:
- 1 ¼ cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 stick unsalted softened butter
- ½ cup creamy peanut butter
- ¾ cup light brown sugar packed
- ¼ cup granulated sugar
- 2 tablespoons granulated sugar for garnishing (optional)
Step 1: Prep
Line 2 cookie sheets with parchment paper or gently grease. Combine flour, baking powder, baking soda, and salt together; set aside.
Step 2: Making the Dough
In a large bowl add butter, peanut butter, brown sugar, granulated sugar and egg; stir to combine. Add in flour mixture and stir until a soft dough forms. Put the dough in the freezer for 20 minutes to firm up quickly, or refrigerate for 1 hour.
Step 3: Bake
Preheat your oven to 350 degrees Fahrenheit.
Divide dough into 22 equal portions. Roll into balls, place on a cookie sheet 2 inches apart. Using a fork, press down horizontally and then vertically to create a criss-cross pattern on top of the cookie.
Drizzle tops with granulated sugar and bake for 12 minutes. Store cooled cookies in an airtight container at room temperature.
Substitutions & Tips
- You can replace peanut butter with almond butter, but if you do, make sure to also add ½ teaspoon of almond extract.
- If you add ¼ cup more flour, you won't need to chill the dough before baking.
