What You’ll Need
For the Pasta Dough:
- 1 ½ cups all-purpose flour (plus an extra ½ cup, in case the dough is sticky)
- ½ teaspoon salt
- 4 large eggs
- 1 to 2 tablespoons extra-virgin olive oil
For the Filling:
- 1 pound ricotta cheese
- ½ cup spinach (optional)
- 3 tablespoons grated cheese
- 1 teaspoon fresh or dried chopped parsley
- 1 large egg
How to Make It
Step 1: Prepare the Ravioli Dough
- In a large bowl, combine the flour and salt. Make a well in the center of the mixture.
- Add the 3 large eggs and 1 tablespoon of olive oil to the well, lightly beating them with a fork.
- Gradually draw the flour into the well in a circular motion until everything is mixed. The dough should form a ball. If it’s too sticky, gradually add more flour until you achieve a soft, tacky consistency.
- Divide the dough into two disk portions, wrap each in plastic wrap, and let them rest for 30 minutes to relax the gluten.
Step 2: Make the Filling
- In a separate large bowl, combine all filling ingredients, including spinach and parsley for added flavor. Mix until you achieve an even consistency.
- Cover the bowl with plastic wrap and refrigerate for a few minutes to firm up the filling.
Step 3: Assemble and Cook the Ravioli
- Dust your counter with flour. Unwrap the dough and roll it out into thin rectangles.
- In a small bowl, beat together 1 large egg with 1 tablespoon of water to create an egg wash.
- Use your finger or a brush to create a line of egg wash down the center of the dough rectangle. Spoon the filling onto one half of the dough, placing each spoonful about 2 inches apart.
- Fold the other half of the dough over the filling, creating a pocket. Press out any air pockets around each filling mound.
- Cut the ravioli into square shapes with a sharp knife, and crimp the edges with a fork to seal.
- Place the ravioli on a parchment-lined cookie sheet until ready to cook.
Step 4: Cook the Ravioli
- In a large pot, bring 10 quarts of water to a boil, adding 1 teaspoon of salt and 1 tablespoon of olive oil.
- Carefully place the ravioli into the boiling water and cook for about 4 minutes. They’ll float to the top when they’re ready.
- Use a strainer or slotted spoon to remove the ravioli from the pot.
Step 5: Serve and Enjoy!
Finish your ravioli by tossing them in your favorite sauce and sprinkling with cheese. Enjoy the fruits of your labor and savor every bite!
