As I write this I am looking at the already changing leaving out the window. I was able to break out my favorite fall sweater and am already planning my “fall weekend” with my girls! You know what all this means… Fall is in the air! If you are anything like me then you are aesthetic to be able to break out those cozy tasting recipes. Today I am going to be sharing a favorite of mine from The Baking Coach’s very own, Lisa Basini. Grab a pumpkin spiced latte and some mixing bowls, because today we are going to be making some delicious pumpkin scones!
HERE IS WHAT YOU NEED:
SCONES
- 3 cups of all-purpose flour
- ½ cup of sugar
- 5 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin spice
- ½ teaspoon salt
- 6 tablespoons of cold, unsalted butter
- 1 large egg
- ⅔ cup milk (might need 1-2 tablespoons more in needed)
- 1 teaspoon vanilla extract
GLAZE
- ½ cup powdered sugar
- 2 teaspoons water
- ½ teaspoon vanilla extract
HERE IS HOW YOU DO IT:
SCONES:
- Preheat your oven to 400 degrees
- Take a baking sheet and lightly grease the pan or add a sheet of parchment paper on top
- Take a large mixing bowl and combine together your dry ingredients, this includes: flour, sugar, baking powder, cinnamon, pumpkin spice and salt. With a large spoon, combine all the ingredients together
- Take your cold butter and with clean fingertips, carefully crumble the butter into the bowl. You want to the make crumbles of butter fairly small
- In a smaller mixing bowl combine your egg, milk, and vanilla extract. Using a rubber spatula, mix together your wet ingredients. Make sure your egg is properly broken up and combined with the other ingredients
- Slowly combine the wet ingredients in the small bowl into your dry ingredient mixture in the larger bowl. With the rubber spatula start carefully mixing the ingredients (TIP: you will want to mix slowly at first to help all the flour ingredients stay in the bowl). You may need to use your hands to continue mixing all the ingredients together. In the end, a dough mixture should be formed
- Take your dough out of the bowl and place it on a flat and lightly-floured surface. Continue to knead the dough (TIP: when you knead dough, use the heels of your hand to dig into the dough)
- With a rolling pin, roll the dough into a round shape with about 1-inch thickness all around. Cut the dough into 8 wedges and place them all slightly separated on the prepared baking sheet.
- Bake the scones for 15 minutes, or until golden brown
GLAZE:
- In a small mixing bowl mix together the powdered sugar, water and vanilla extract. Mix together until the glaze is smooth and not too thick but not too runny, it should be pourable
- Once the scones are completely cooled, with a fork, drizzle the glaze over each scone (this should be done to personal preference:) )
